KEVIN’S CEDAR PLANKED SALMON WITH DILL SAUCE
( WHITEFISH IS AN EXCELLENT SUSTITUTE FOR SALMON)
Select the quanity of cedar planks needed to match the quanity of salmon to be grilled.
Submerge planks in water the night before grilling. Keep soaking until ready to grill.
Prepare rub morning of grilling. Apply rub generously to salmon on non-skinned side.
Pat down rub on salmon , cover and refrigerate until ready to grill. Rub will melt on salmon as it sits.
- Heat grill to med-hi
- Place planks on grill for 15 seconds then flip planks over
- Place salmon on planks skin side down
- Grill 20-25 minutes or until salmon flakes with fork ( do not flip salmon )
- Keep water bottle handy, planks may flame up on bottom, this is normal.
- Remove salmon to serving dish
- Apply dill sauce to salmon
- Serve immediately
RUB
1 ¼ c. Brown sugar packed
1tbs. Kosher salt
1tbs. Black pepper
½ tbs. Chili powder
½ tbs. Garlic powder
½ tbs. Rosemary
Blend together, spare rub may be cover and saved in refrigerator for future use.
Rub is excellent on other fish and steaks.
DILL SAUCE
2 tbs. Butter
2 tbs. Flour
¼ tsp. Salt
1/8 tsp Black pepper
1 tsp. Dried or fresh dill
dash ground nutmeg
1 c. milk
- Melt butter in 1½ quart sauce pan over low heat
- Add flour, salt, pepper, dill and nutmeg to melted butter
- Stir constantly over med heat until smooth and bubbly. Remove from heat.
- Add milk. Heat to boil, stir constantly, boil 2-3 minutes Sauce will thicken.
- Serve
