HOW TO COOK LOBSTER TAILS

Thaw tails in the refrigerator or in a bowl of cold water. Bring pot with enough water to cover the tails to a boil. Add lobster tails and bring the water back to a boil. Cook 6 minutes for 4 oz tails, 7 1/2 minutes for 6-7 oz tails and about 9 minutes for 10 oz tails. Don't over cook as this will make lobster rubbery.

With sharp knive or scissors, cut the soft shell on the underside of the tail. Pop out meat and enjoy dipped in drawn butter

HOW TO COOK ALASKAN KING CRAB LEGS (EZ)

You can get fancy with boiling or steaming, etc. but the easiest is to bake them ! Most Crab has already been cooked and all you have to do is warm them to the proper temperature.

Thaw Alaskan King Crab legs. Place on cookie sheet (best to have a ridge on the sheet to keep the water from spilling into your oven.) or baking pan. Warm oven to 400 degrees and bake Alaskan King Crab legs for about 4 -5 minutes for small to medium legs and up to 6 minutes or so for jumbo legs (9x12 or 6x9).

I usually use a good pair of kitchen scissors to cut open the legs - holding them with a oven mitt. Dip into drawn butter and enjoy

DRAWN (CLARIFIED) BUTTER

Slowly heat butterover low heat until butter separate into three layers - the top layer is foam, the bottom layer is the milk solids and the middle layer is the drawn butter. Skim the foam off the top and remove the remaining liquid from the stove and let it cool for a few minutes. Strain the remaining liquid through a fine sieve or cheesecloth.
